Cooking Instruction
Roasted Grapes
- Preheat oven to 425º.
- Toss grapes in olive oil then arrange in single layer on baking sheet. Bake for 15-20 minutes or until grapes start to burst.
Swedish Meatballs
- Add oil to a small pan over medium-high heat and sauté onion until tender. Add garlic and cook until fragrant. Remove from heat and set aside.
- In a large bowl, combine all ingredients (including onion and garlic) except butter. Be sure not to overwork the ground meat, as you’ll end up with a tougher meatball (not tender and juicy).
- Form meatballs with 1 1/2” diameter.
- In a large pan over medium heat, melt butter. Working in batches without overcrowding the pan, brown meatballs on all sides. About 5 minutes. Remove from pan and set aside.
Swedish Meatball Sauce
- In a large pan over medium heat, melt butter. Once butter is bubbling, slowly whisk in flour and cook for ~1 minute.
- Whisk in beef broth a little at a time until well-combined.
- Whisk in pepper jelly and mustard until well-combined. Slowly whisk in cream and bring to simmer while whisking frequently.
- Add in meatballs and, occasionally stirring, continue to simmer until sauce reaches desired thickness.
Swedish Meatball Sandwich Build
- Place 3-4 meatballs in hoagie bun. Spoon more sauce over top. Add roasted grapes and gouda cheese. Serve immediately.
