- 4 salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon dried dill
- Salt and pepper to taste
For the Roasted Vegetables:
- 1 small head broccoli, cut into florets
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Place salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, sprinkle with dried dill, salt, and pepper.
- In a separate bowl, toss broccoli florets, red bell pepper slices, and zucchini slices with olive oil, dried thyme, salt, and pepper.
- Spread vegetables on another baking sheet.
- Bake salmon and vegetables in the preheated oven for 15-20 minutes, or until salmon is cooked through (internal temperature of 145°F or 63°C) and vegetables are tender.
- Serve hot, with a squeeze of lemon if desired.
