Ingredients
- 1 (9-ounce) package of leafy greens
- 1 cup of halved cherry tomatoes
- ½ of a cucumber, chopped
- 1 large avocado, diced
- ½ cup of thinly sliced red onion
- 1 (15-ounce) can of garbanzo beans, drained and rinsed
- ½ cup of chopped cooked vegan bacon
- 1 batch of your favorite creamy dressing (I like ranch)
Preparation
- Prepare two large salad bowls with leafy greens. Add half of the cherry tomatoes, cucumbers, avocado, red onion, garbanzo beans, and vegan bacon to each bowl. Set aside.
- Drizzle on your favorite dressing. Set immediately.
