Ingredients
Cookies
- 8 oz Chocolate Chips
- 2 tbsp Butter
- 2 Large Eggs
- 1 tsp Vanilla
- ½ cup Sugar, Granulated
- ½ cup All Purpose Flour
- ¼ tsp Baking Powder
Topping
- 1 cup Evaporated Milk
- 8 tbsp Butter
- 2 Egg Yolks
- 1 cup sugar, Granulated
- 1 tsp Vanilla
- 1 cup Pecans, Chopped
- 1 cup Coconut, Shredded
- 5 oz Chocolate for Drizzle, Melted
Method
- Preheat the oven to 350 degrees.
- In a microwave safe bowl, combine the 2 tbsp butter and the 8 oz chocolate chips. Heat the mixture at 30 second intervals until completely melted and smooth.
- Let the chocolate cool a bit.
- In a bowl, whisk together the eggs, 1 tsp vanilla and ½ cup of sugar.
- Add the chocolate mixture to the egg mixture, and whisk to combine.
- In a mixing bowl, place the flour and baking powder.
- Mix the chocolate mixture into the dry ingredients and stir until completely combined.
- Drop the batter by the teaspoonful onto a parchment lined baking sheet. Bake for 10 minutes and let cool.
- In a saucepan over medium heat, combine the egg yolks, 8 tbsp butter, 1 cup sugar and 1 cup of evaporated milk. Simmer until the mixture thickens well.
- Remove from the heat and stir in the vanilla, pecans and coconut.
- Spoon some of the topping onto each cookie and let set.
- Drizzle he melted chocolate over the cookies, chill for 15 minutes and serve.
