- Salt and pepper to taste
For the Avocado Salsa:
- 2 avocados, diced
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- Preheat grill to medium-high heat.
- Brush chicken breasts with olive oil and season with salt and pepper.
- Grill chicken for 6-7 minutes per side, or until cooked through (internal temperature of 165°F or 74°C).
- While chicken is grilling, prepare the avocado salsa by combining all ingredients in a bowl and gently mixing.
- Serve grilled chicken topped with avocado salsa.
