- 4 medium zucchinis, spiralized into noodles
- 1/2 cup cherry tomatoes, halved
- 1/4 cup pesto sauce (store-bought or homemade)
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions:
- Heat a large skillet over medium heat.
- Add spiralized zucchini noodles and cook for 2-3 minutes, stirring occasionally, until noodles are just tender.
- Add cherry tomatoes to the skillet and cook for another 1-2 minutes until tomatoes are slightly softened.
- Remove skillet from heat and stir in pesto sauce until noodles and tomatoes are evenly coated.
- Season with salt and pepper to taste.
- Optional: Sprinkle with grated Parmesan cheese before serving.
