Ingredients
For the Spicy Prawn Toast
- 200 grams peeled and deveined Black Tiger Prawns or Shrimp – rinsed and pat-dried with paper towels (If using not already peeled and deveined prawns, you’ll need 400 grams.)
- 2 Garlic cloves – minced
- 1.5 TSP Ginger – minced
- 2 Red Chilies (Bird’s eye preferred) – chopped
- 1 large Spring Onion – chopped
- 1/4 TSP ground White Pepper
- 1/8–1/4 TSP Kosher Salt.
- 1/4 TSP Crushed Red Pepper Chili Flakes
- 1 TSP Low Sodium Light Soy Sauce
- 1 TSP Shao Xing Rice Wine
- 1 TSP Sesame Oil
- 1 large Egg White
- 3 slices White Sandwich Bread
- 1.5–2 TBLS Trader Joe’s Everything but the Bagel Sesame Seasoning Blend (You can use a homemade Everything Bagel seasoning blend, or white or black sesame seeds instead if you like.
- Use as much or as little as you like.)
- 3–4 cups Canola or Vegetable Oil (peanut oil works well too), for frying (amount may vary depending on the size of your frying vessel)
To Serve
- Thai Sweet Chili Sauce
- Chopped fresh Coriander (optional) – for garnish
Instruction
- Make the Spicy Prawn Paste: Combine the prawns, garlic, ginger, red chilies, spring onion, ground white pepper, kosher salt, crushed red pepper chili flakes, low sodium soy sauce, Shao Xing rice wine, sesame oil, and egg white in a food processor bowl.
- Cover and pulse until a smooth paste has formed. (Note: You may need to uncover and push down the ingredients with a spoon once or twice in between.)
- Spread and sprinkle: Spread the prawn paste evenly on a slice of bread, then sprinkle with Everything but the Bagel Seasoning (or sesame seeds).
- Using a sharp knife, cut the bread diagonally from the top on each side to create four triangles.
- Then repeat with the remainder two bread slices.
- Fry: Heat 3-4 cups of canola or vegetable oil in a small pot until hot.
- Working in batches of three to four pieces (depending on the size of your frying vessel), carefully add the triangles paste side down and fry for a minute or two until the paste side has browned.
- Then use a stainless steel slotted spoon to turn the triangles and fry the bread side until golden – about another 1-2 minutes.
- Transfer to a paper towel lined plate to drain, then repeat with the remainder pieces until all of them are cooked.
- To Serve: Transfer the spicy prawn toasts to a serving plate and garnish with chopped coriander if desired.
- Serve immediately with some Thai Sweet Chili Sauce on the side!
