- 2 tablespoons olive oil
- 1 cup diced onion
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 can diced tomatoes
- 1 cup diced carrots
- 1 cup diced potatoes
- 1 cup frozen corn
- 1 cup green beans, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- In a large pot, heat olive oil over medium heat. Sauté onion and garlic until softened.
- Add vegetable broth, tomatoes, carrots, potatoes, corn, green beans, basil, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes until vegetables are tender.
